Roasted Eggplant Chutney / Kathirikkai Thogaiyal

Do you like eggplants? Some people do not like the soft texture of this purplish vegetable. I actually like it in dim sum dishes, where you would fill it with some prawn or fish paste and fry it. Then, pour a black bean savoury sauce over it before serving.

I also really enjoy the exotic flavours in baba ganoush too. So, when I see this chutney recipe, I want some too!
