We started this restaurant about one years ago. (May 12 2021)

The owner is Japanese and he used to work at Italian restaurant for long time, and he has knowledge about Italian cuisine as well as Japanese.
Therefore he ended up collaborating both cuisine and made the Italian Japanese style pasta.

Japanese who immigrate to Canada
Working Italian restaurants for long time.
As well as Japanese restaurants.

3) Some interesting facts about your product?

Most of our food is homemade, and we make from scratch.
We baked focaccia bread every single day.

It’s matcha that led me to Whisk Matcha!

Who is Whisk Matcha?

1) When and why did you start your business?

I started Whisk as a side hustle and a passion project when I was on maternity leave with my son, in 2015. I always loved everything matcha.

2) What was your background?

I studied hospitality management in University, so I’m totally in the field. Prior to Whisk, I worked in luxury hotels from room services to catering sales to event management.

3) What is special about your products?

I personally know and have met all the tea farmers that produced our matcha in Japan! I’m so grateful that I’ve got to build meaningful relationship with them (prior to the pandemic!).

4) Another else that you would like to share?

All the menu items at our cafe (from matcha ceremonial to Vietnamese coffee to avocado toasts) are all my personal favourites that I used to enjoy everyday. It feels incredible to share these with everyone. Plus, everything is vegan at our store (but you wouldn’t tell any differences :)).

And the rest was history.

Who is Kove Ocean Foods?

1) Why and when did you start your business?


About one year into building seaweed farms and starting the process of growing seaweed at scale (in partnership with local First Nations), our founding partners at Cascadia Seaweed determined that the highest and best value for the seaweed that we are growing, would be ideal to develop our own brand of consumer food products. Eventually, that was when I joined as a partner and how our CPG food brand Kove was born.

2) Next, what was your background?


Previous to Cascadia, I was running a charity that I helped co-found with my best friend, Ruben’s Shoes Society. When Covid hit, our work came to a stand-still as all of our events were cancelled or postponed. Ultimately, all of my fundraising activities came to a halt. I had nothing but time on my hands. I focused on my health, running and meditating for hours. Soon, this opportunity came to me via a text message one day in May 2020.

3) Interesting facts about your product?

The foods we eat have a significant impact on the health of the planet. At Kove, we’re developing the tastiest, most delicious foods made with seaweed grown in the pristine waters of the Pacific Ocean while creating economic opportunities for First Nations in British Columbia. SEA SPICE is our signature seaweed seasoning done in a furikake style and is made with Sugar Kelp flakes grown by Cascadia Seaweed. Seaweed is incredibly healthy for the planet as it grows in the ocean so there is no demand on land or fresh water. Furthermore, as it grows seaweed provides essential nutrients to ocean life and helps to create healthy habitat and promote biodiversity.

Sea Spice is incredibly flavourful and acts like a natural organic flavour enhancer, enhancing the taste of everything it is added to. We currently have our original flavour available and will be launching 2 additional flavours, Sriracha and Lemon, very soon. People are loving it on avocado toast, ramen, and poke bowls, it takes popcorn to new heights and is an easy salad dressing when you combine sea spice with your favourite go-to olive oil. It is also great on eggs, steamed rice, and absolutely awesome with potatoes either mashed or baked!

Vendor Feature: Kaonta Chicken

This was the first time for me to have such a complete Filipino meal! Thank you, Kaonta Chicken!

Who Is Kaonta Chicken?

1) When and why did you start your business?

I started grilling inasal at home in January of 2021.

Chicken inasal, commonly known simply as inasal, is a variant of the Filipino chicken dish known as lechon manok. It is chicken marinated in a mixture of calamansi, pepper, coconut vinegar and annatto, then grilled over hot coals while basted with the marinade. Wikipedia

The business itself started after my mother requested for me to cook inasal for dinner, as she just got out of the hospital. I prepared and served our family dinner that night, but before that I snapped a picture of the food and posted it on my Instagram story. Within a few hours, a bunch of my friends began asking what restaurant we were at. To the shock of many, I said it was my home. My sister also took a photo and posted it to her Instagram. Without me knowing, she began taking orders from her coworkers!

That was when I first purchased to-go boxes and sauce containers. That was the first step of how KaonTa Chicken came into fruition. To be honest, I did not plan on making this recipe into a business, but this is what it has become and I am quite grateful for the massive support that I have received.

2) What was your background?

2) I studied culinary arts at VCC in 2018, and in the following years I worked at several different places. Having that experience from both school and working different jobs, gave me the basis for KaonTa Chicken. There is a lot more to be learned in this industry, and I hope that the coming lessons will bring KaonTa Chicken to another level.

3) What is special about your products?

I only serve chicken, as I do want to obtain Halal certification in the future. The menu and the dishes itself are made to not be exotic, but something that people can identify with. Comfort food is what the concept of KaonTa Chicken is. The other items on the menu came mostly with quick thinking. For example the Seitan Inasal came from when a large order from a factory came, they ordered around 100 lunches, and then they said they have 28 vegetarian/vegan co-workers. I had to think about what would be a way to create a vegetarian version of the original Chicken Inasal, but not take away the essence of the dish. That was how the Gluten Skewers was born.

I love kombucha! There are some brands that are stronger in taste and not for everyone. However, when I tried Culture Craft, I knew this was great for newcomers to try! Thank you, Culture Craft!

Who is Culture Craft?

1) Why and when did you start your business?

Culture Craft Kombucha was founded in 2015 by North Vancouver entrepreneur and chef Dan Larsen, who decided to turn his attention from a 15-year grind in the back of house at renowned restaurants like La Quercia, Café Medina, Sonora Resort and Bishop’s and combine his relationships with local farmers and purveyors and passion for food and drink into building his own boutique brand of kombucha.

Admittedly, his motivation behind the creation of Culture Craft Kombucha was also one of a personal quest to improve his own health.

2) What was your background?

“While working as a chef I was tired, wired and burned out, had neglected my health and found myself with a seriously compromised digestive system,” he says. His future mother-in-law introduced him to the nutritional benefits of kombucha, which can aid in reproducing beneficial gut bacteria heavily depleted from stress, toxins and a poor-quality diet to create a more powerful digestive response and strengthen the symbiotic relationship shared between mind, body and digestive system.

Not to mention that the nutritionally ‘alive’ functional beverage contains healthy organic acids, antioxidants, amino acids, enzymes and B vitamins — all of which have the potential to help boost energy, mood and immunity and promote detoxification.

It also allows him to provide his young son Shay with a healthy, delicious probiotic drink that is nutrient dense, low in sugar — making it a far superior beverage to pop or juice — and made with local, organic, preservative- and pesticide-free ingredients that Shay recognizes.

When it comes to Kombucha, Dan relies on the principle of ‘Fresh is Best’.

It’s our mission to shorten the distribution chain and show consumers who are thirsty for change that only the freshest will do.”

Dan is hands-on every step of the way, from recipe creation and sourcing all the seaonally inspired ingredients in each flavour to brewing and bottling the finished product. His favourite part of the business is sourcing fresh, organic produce from some of BC’s best farms to elevate the flavour of each brew, all while supporting local food systems.

In a nod to his Danish heritage, Dan kept the Scandinavian principles of ‘Hygge’ — a sense of simplicity, coziness and instantly comfortable conviviality that engenders a feeling of contentment or wellbeing — front of mind when envisioning all aspects of the Culture Craft Kombucha brand. And it’s these same principles with which he conducts his business and nurtures his relationships with local farmers, purveyors, clients and consumers.

1. Why and when did you start your business?

• The company was officially formed in summer 2019.  After wrapping up a consulting project, I took a break to recharge at my family’s jujube farm hours away in the Southern Mojave Desert, California.  Being an Asian American, I knew about jujubes as a kid but I never took an interest in them assuming they tasted like medicine.  However, in my older years, I was all ears on hearing its broad range of anti-aging and wellness benefits — AND they surprisingly tasted sweet & delicious!  They send me off with a supply to last a few months and I start eating them regularly.  By the time I was done with my supply I noticed a difference in my complexion, blood pressure and quality of sleep.  I visit the local supermarkets and specialty stores to buy more and none of them carried any, assuming I was talking about the old school gummy candy.  That’s when it dawned on me — in North America jujubes are the Ultimate Unknown Superfood®.  I pass on the next consulting gig and instead launch JUJUME to drive awareness of this extraordinary fruit and show how easy it is to get anti-aging nutrition the tasty way.
